Yes. Cerebro uses Tags for this.

Main menu > Tools > Administrator... > Task tags tab.

You can create a tag with the necessary data type. When creating one, you can set the list of projects that will have access to this tag.

After creation, you can set up tag values on any task using Task properties. The tags will also be shown in task lists.
